Tofu Bahn Mi
A vegetarian take on a classic Vietnamese sandwich

Ingredients
Sandwich
- 1/2 block asian flavor tofu thinly sliced
- 1 tbsp sesame oil
- 1 tsp soy sauce
- 1/2 carrot cut into matchsticks
- 1/3 cucumber cut into matchsticks
- 1/2 jalapeno sliced into rounds
- 1/2 loaf french bread
- 10 sprigs cilantro with stems chopped
- 1/2 lime
Sauce
- 1 tbsp vegan mayo
- 1 tsp soy sauce
- 1 tsp chili paste
- 1/2 tsp sesame oil
- 1/2 tsp tahini
- 1 clove garlic minced
- 1 inch ginger grated
Instructions
- Add sesame oil and soy sauce to pan on medium heat, when hot, add tofu. Brown each side, approximately 5 minutes.
- Cut french bread, and toast in oven at 425 for a few minutes until it's warm and crispy.
- While tofu is cooking, mix the sauce ingredients together, set aside.
- Prepare vegetable sandwich toppings (carrots and cucumbers into matchsticks, jalapenos sliced into rounds), and garnishes (cilantro chopped and lime sliced for squeezing).
- When tofu is ready, spread sauce in the french bread, add it to the sandwich, then layer on carrots, cucumbers, jalapenos, cilantro, lime juice, and a little more sauce.
