Grain & Kale Bowl
A gooey, yummy bowl 'o goodness. Packed with vitamins and protein!
Equipment

Ingredients
- 1 cup cooked pearled barley
- 1 cup fresh kale, chopped
- 1/4 cup cherry tomatoes, chopped
- 1/2 cup chickpeas
- 1/4 cup cashews
- 1 lemon
- 2 tbsp nutritional yeast
- 1 tsp smoked paprika
- 1/2 tsp chipotle powder
- pinch salt and pepper
Instructions
- Put cashews and paprika in a bowl and add just enough water to cover.
- After ten minutes, put cashew mixture, half squeezed lemon, nutritional yeast, chipotle powder, and salt / pepper into the blender. Blend until very smooth.
- Throw pearled barley, chickpeas, and cashew cheese into a pot over medium heat. Stir constantly until gooey and warm.
- Toss in chopped, fresh kale, tomatoes, and other half of the lemon, squeezed. Allow kale to wilt slightly, 30-60 seconds. Stir constantly.
- Throw gooey, delicious contents into a bowl and try not to eat it all in one bite.
