Ingredients
  

Corn

  • 4 ears of corn

Sauce

  • 1/4 cup vegan mayo
  • 1/4 cup feta cheese (or cotija, or goat cheese) crumbled
  • 2 cloves garlic minced
  • 2 tbsp cilantro chopped
  • 1/2 lime (juiced)

Garnish

  • 1/2 tbsp smoked paprika
  • 1/2 tbsp chili powder
  • 1/2 tbsp cilantro chopped
  • 1/2 lime (juiced) optional

Instructions
 

  • Preheat oven to 350F.
  • Put corn, still in husks on the middle oven rack. Cook for ~40-45 minutes until heated through and tender.
  • While corn cooks, mix vegan mayo, cheese, garlic, cilantro and lime until combined.
  • When corn is done, remove husks. Using a spatula, spread the sauce around the entire cob. Garnish with smoked paprika, chili powder, cilantro and optionally lime.
