Broccoli Soup
A freaking delicious, vegan soup. So simple to make, you just can't screw it up. I guess you could, but it would be hard. If you manage it, pat yourself on the back.
Equipment

Ingredients
- 1 crown broccoli
- 2 cups vegetable broth
- pinch salt
- pinch pepper
- pinch garlic powder
Garlic oil
- 1 clove garlic
- 1 tbsp olive oil
Cashew Cheese soup base
- 2 tsp smoked paprika
- 1 cup cashews
- 2 lemons
- 1/4 cup nutritional yeast
Instructions
- Chop entire crown of broccoli (yes, even the stem) and throw into a large pot with the veggie broth over medium high heat. Cover & set timer for ten minutes.
- While the broccoli is doing it's thing, put the cashews and paprika in a separate bowl, using just enough water to cover the cashews.
- When the timer goes off, remove the pot from heat and set aside.
- Add the cashew mixture into a blender with lemons (juiced), nutritional yeast, salt, pepper, and garlic powder. Blend until smooth.
- Tip the broccoli and veggie broth into the blender. If you have a smaller blender, remove half of the cashew cheese and do this in parts. Blend to your desired level of smooth.
- Give that soup a taste and add more salt, pepper, smoked paprika, an/or garlic to your taste preference.
- Let the soup sit a minute while you prepare some garlic oil. This step is optional but recommended.
- Throw a roughly chopped clove of garlic into a pan with the olive oil and simmer for a minute or so. Once it starts to smell amazing, you've done it!
- Pour soup into bowls and drizzle oil over. Toss the garlic or use it in the soup, whatever you feel! You do you!
