Bean & Corn Flauta
Delicious bean and corn filled flautas
Equipment
- bowl for mixing
- deep pan for frying
Ingredients
- Vegetable or canola oil for frying
- 1 can vegetarian refried beans
- 1/2 can sweet corn
- 1 jalapeno minced
- 1/2 small red onion
- 1/2 lime juiced
- 1 tsp cayenne
- 1 tsp garlic
- 1 tsp cumin
- 1 pinch salt
- 6 tortillas
Instructions
- Mix the beans, corn, jalapeno, onion, lime juice and spices
- Spoon mixture into flat tortillas, and roll them
- Pour oil about 2 inches up in a pan on the stove, and heat medium to medium-high
- Once hot, place flautas in 2-3 at a time and rotate after 3-4 minutes until golden brown
- Let cool for a few minutes, and serve with guacamole and/or cashew cheese
