Delicious bean and corn filled flautas

Equipment

  • bowl for mixing
  • deep pan for frying

Ingredients
  

  • Vegetable or canola oil for frying
  • 1 can vegetarian refried beans
  • 1/2 can sweet corn
  • 1 jalapeno minced
  • 1/2 small red onion
  • 1/2 lime juiced
  • 1 tsp cayenne
  • 1 tsp garlic
  • 1 tsp cumin
  • 1 pinch salt
  • 6 tortillas

Instructions
 

  • Mix the beans, corn, jalapeno, onion, lime juice and spices
  • Spoon mixture into flat tortillas, and roll them
  • Pour oil about 2 inches up in a pan on the stove, and heat medium to medium-high
  • Once hot, place flautas in 2-3 at a time and rotate after 3-4 minutes until golden brown
  • Let cool for a few minutes, and serve with guacamole and/or cashew cheese
