Pasta with kale, peas, and sun dried tomatoes.
This dish is quick, easy, and filling. Delish!
Equipment
- medium pot
- large pan
Ingredients
- 2 cups chickpea pasta *you can use whatever pasta you'd like!
- 2 cloves garlic
- 1 tbsp olive oil
- 1/2 cup sun dried tomatoes
- 1 cup frozen peas
- 2 cups chopped, fresh kale
- 1 cup cashew cheese
- pinch salt and pepper
Instructions
- Begin boiling water for pasta. Dice garlic and chop kale, set aside (separately).
- Cook pasts to specifications on box. We used chickpea pasta.
- While pasta is almost done cooking (2-3 minutes left), add oil to pan and heat over low medium heat. Toss in garlic after a minute or so and wait for yummy smells to fill your kitchen.
- Add sun dried tomatoes to pan with garlic and stir for 30 seconds.
- Add peas, kale, and cashew cheese to pan moments before adding cooked pasta.
- Add pasta and stir all ingredients together until kale is slightly wilted and peas are warm.
- Add salt and pepper, to taste.
