Cashew Cheese

Ingredients
  

  • 1 cup cashews
  • 2 lemons
  • 1/4 cup nutritional yeast
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • pinch salt and pepper

Instructions
 

  • Pour cashews into bowl and cover with water. Add spices and stir.
  • After desired amount of time (at least ten minutes), pour cashew mixture into blender.
  • Add juice from one lemon and nutritional yeast. Blend for 1-2 minutes on high until smooth.
  • Taste – is it everything you hoped for? I usually prefer two lemons, so now is a good time to squeeze in another lemon if you think it needs more acidity. Add more smoked paprika and salt and pepper, if desired.
  • Blend 1-2 minutes, until smooth.

Notes

One of the hardest things for me as I try to eat healthier is eliminating cheese. Cheese grosses me out in concept (basically pus) but it’s so good on nachos. This recipe truly changed the game for me and made it easy to say, “cheese? No thanks.” This is also a favorite of friends and family at BBQs, dock parties, get togethers, etc. Pretty much everything is better once you smother it in some cashew queso.
