Ingredients
  

  • 1 cup cooked pearled barley
  • 1 cup fresh kale, chopped
  • 1/4 cup cherry tomatoes, chopped
  • 1/2 cup chickpeas
  • 1/4 cup cashews
  • 1 lemon
  • 2 tbsp nutritional yeast
  • 1 tsp smoked paprika
  • 1/2 tsp chipotle powder
  • pinch salt and pepper

Instructions
 

  • Put cashews and paprika in a bowl and add just enough water to cover.
  • After ten minutes, put cashew mixture, half squeezed lemon, nutritional yeast, chipotle powder, and salt / pepper into the blender. Blend until very smooth.
  • Throw pearled barley, chickpeas, and cashew cheese into a pot over medium heat. Stir constantly until gooey and warm.
  • Toss in chopped, fresh kale, tomatoes, and other half of the lemon, squeezed. Allow kale to wilt slightly, 30-60 seconds. Stir constantly.
  • Throw gooey, delicious contents into a bowl and try not to eat it all in one bite.
