Ingredients
Corn
- 4 ears of corn
Sauce
- 1/4 cup vegan mayo
- 1/4 cup feta cheese (or cotija, or goat cheese) crumbled
- 2 cloves garlic minced
- 2 tbsp cilantro chopped
- 1/2 lime (juiced)
Garnish
- 1/2 tbsp smoked paprika
- 1/2 tbsp chili powder
- 1/2 tbsp cilantro chopped
- 1/2 lime (juiced) optional
Instructions
- Preheat oven to 350F.
- Put corn, still in husks on the middle oven rack. Cook for ~40-45 minutes until heated through and tender.
- While corn cooks, mix vegan mayo, cheese, garlic, cilantro and lime until combined.
- When corn is done, remove husks. Using a spatula, spread the sauce around the entire cob. Garnish with smoked paprika, chili powder, cilantro and optionally lime.
